About Roll Cajun

My name is Matt and I have always loved good people, good times and great food! Being born and raised in Lake Charles, Louisiana I grew up being accustomed to some of the finest seafood and cuisine Louisiana has to offer! My family transplanted there from Breaux Bridge, after my grandfather became the first manager of the historic Lake Charles Civic Center. My wife Renee originally hails from Marrero, Louisiana and we have two sons Clayton and Charlie.  Our family roots run deep through the heart of Cajun Country as we come from a long line of LeBlanc’s, Carmadelle’s, Ardeneaux’s and Perilloux’s.

My story is pretty simple, I was attending University Louisiana Lafayette, the Ragin Cajuns, on a track scholarship and 9/11 happened. I felt compelled to action and my life would forever change. My family and I would end up spending 21 years in the United States Air Force traveling all over the world and the United States. I’ve been to Iraq, Qatar, the Netherlands, South Korea, Japan, Ireland and all over the beautiful United States, but the one thing that was missing from all these awesome (and not so awesome) places was MEAT FILLED, REAL CAJUN, DELICIOUS BOUDIN! 

The Fam

When shipping became unaffordable, I went on a quest to begin making my own. When I was a kid, I remember eating boudin and it making my day. It was spicy and burned my lips at times but I couldn’t get enough. Unfortunately, many vendors who ship today have begun over stuffing their boudin with rice making it more affordable to produce and have lost their touch with the original Louisiana ingredients which bring out the true Cajun flavor. After several years of working on it, I discovered the perfect recipe!

 

Food has always been my gift to the world. Seeing the smiles of happy faces when non-Cajuns try our delicious cuisine fills my heart with joy. It is my hope and privilege to share this passion with you. I retired from military service on August 1, 2023, and as destiny designed it, we are proud to call Birmingham our forever home.
